Snowed-in days invite a certain kind of kick back and relax vibe, soft fleece hoodie with bad baggy fit PJ bottoms, favorite a binging, and of course, comfort foods! which leads me to when TikTok’s viral baked lemon ricotta started filling my feed, it felt like the perfect excuse to lean into a cozy snow-day baking project. I wasn’t trying to chase a trend as much as I was craving something warm, lemony, and comforting — the kind of cake that feels indulgent yet simple, familiar yet with my own personal twist.


So yes — I took a shortcut and used a Duncan Hines butter cake mix. Cozy living isn’t about perfection; it’s about intention. And sometimes intention looks like choosing ease so you can enjoy the moment. But this wasn’t going to be just any cake.

Lately, TikTok has been buzzing about baked lemon ricotta cheese, especially the seasonal version from Trader Joe’s. Of course, when I finally went looking for it, it was sold out — and I was told it wouldn’t be back until November or December. That’s when it hit me. I knew exactly where to look for it... Growing up, I spent Saturday's with my mother taking my brother and I to Philadelphia’s historic 9th Street Italian Market, a place once bursting with open-air produce stands, hanging awnings, fresh pasta shops, Anastasia's Seafood and Canulli's Meat and Poultry, and the unmistakable hum of a neighborhood built around food. Vendors called out to passersby, crates of fruits and vegetables lined the sidewalks, and the air outside smelled of fire burning in a huge barrels. Quaint specialty shops gave away smells of their best signature coffee, chocolates and gelato at Anthony's Coffee Shop, the best of kitchen cookware, coffee tea and italian specialties at Fante's and specialty olive oils and vinegars at Cardena's, and bread and other baked goods fresh from the oven. It was lively, communal, and deeply rooted in tradition.


A lot has changed since then, a few of the shops I remember are there but that original feeling isn’t quite the same for me anymore. I missed that when I moved away — until I found DiBruno’s. The Lemon Ricotta Cake (With a Happy Accident 🍰)

Anywho, I digressed a moment with nostalgia, but yes — DiBruno’s absolutely had the baked lemon ricotta cheese I’d been searching for. Not just had it… but had one that truly delivers. If you thought the "other brand" mentioned on TikTok was good, you must try DiBruno’s.


I decided to fold the lemon ricotta into my cake mix to infuse the butter cake with that bright, creamy citrus flavor. Also I decided to line the bottom of my cake pan with thin sliced almonds. Nothing fancy, the regular store brand. Everything was going smoothly — until it wasn’t.


I melted the butter, realized it was too hot, popped it in the refrigerator to cool… and then completely forgot about it. By the time I noticed, the cake was already in the oven. Too late.
